This little recipe has become a great staple in our house and a great way to use up frozen chicken breasts. It's got a bright, refreshing flavor perfect for summer and by broiling the chicken- you get a nice brown crust that makes for excellent deliciousness.
Here's the ingredients we used, and then we followed the directions for the recipe over at Rock Recipes which I originally discovered via Pinterest. The only difference is we used chicken breasts instead of a whole chicken, and we thawed ours in the fridge in a marinade of olive oil, garlic, and white wine.
- 4 chicken breasts, fresh or defrosted/lightly marinated in olive oil, garlic, and white wine
- 3 tbsp olive oil
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 tsp oregano
- Juice of 3 lemons (use peels with chicken in the broiler)
